Cauliflower/Spinach Balls

Ingredients
1 head of cauliflower — remove outer stems
1 cup chopped spinach
1/2 cup chopped cilantro
2 sprigs scallion/green onion diced
2 sprigs garlic diced
1/2 cup bell peppers diced (red/yellow)
Sea salt – pinch
1/2 cup quinoa
1/4 cup grape seed oil
1 egg white

Directions

Sauté cilantro, scallion, garlic, bell peppers, spinach with 1/2 grape seed oil. Use blender or food processor to finely chop cauliflower. Combine cauliflower and egg with sauté mixture and form into balls. Roll balls into quinoa flakes and place in baking dish.

Sprinkle remaining oil and bake in oven at 350 degrees for 20 minutes
